In the walk in cooler, observed raw ground beef placed on a bucket of ready to eat pickles, and raw shrimp placed above unwashed vegetables. Discussed with operator proper storage and provided operator with safe refrigerator storage handout. Operator rearranged for proper storage.

    Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. On the cook line, observed house made hollandaise sauce (78F - Hot Holding). Operator foods stated it is house made contains egg and butter. Operator stated foods were made two hours prior to inspection. Discussed time as a public health control with operator and provided time as a public health control form.
